I'm traveling in County Cork in January in two weeks. Please help I need some things to do.?

My husband is working over there so will not be able to take me around. He's warned me that the roads are tricky to manuever. But I want to get as much out of this trip as I can. I'm only there 8 days. We're going to the Bunratty Castle my first day and will be staying in Kinsale. As much as I wish that I could Dublin is too far this time. What are some other things that are open in January? What are some things not worth stopping for? Please help. These travel guides aren't helping. They're aimed toward Spring and Summer.

I have marked the most interesting ones for you here, there are many more to be honest, but you probably won't have enough time.
